ABSTRACT

In human food, poultry products are a good source of protein, vitamins, and minerals. One of the main sources of vitamin B12 is found in it. It offers a number of benefits since just one-third of the saturated fats, which are less nutritious, and half of the fat in chicken meat are monounsaturated fats. Due of its significantly lower concentration of saturated fats compared to red meat, it has become a crucial part of non-vegetarian cuisine. The trans-fats that cause coronary heart disease are absent from chicken flesh. As a result, it is seen as healthier in comparison to other non-vegetarian foods. One of the world’s top producers of eggs and chicken meat is India. In 2018, it came in third for egg production and fifth for chicken meat production. In 2018, it was predicted that the broiler and egg poultry market in India was worth Rs. 1750 billion. The poultry industry is anticipated to continue expanding and reach Rs. 4304 billion by 2024, expanding at a compound annual growth rate of 16.2% from 2019 to 2024. The organization and operation of the Indian poultry industry have significantly changed over the past 20 years, going from a straightforward backyard enterprise to a big agribusiness. Significant investment has been drawn to chicken farming and related processing because of this change. The country’s layer (egg) market is expected to expand by 6-7 percent yearly, while the broiler market is expected to rise by 8-10 percent annually. About three-fourths of India’s total egg output comes from industrial poultry farms, with the remaining one-fourth coming from backyard or family poultry.
